SAMO× Unveils Its Autumn Menu

This autumn, SAMO× presents a menu that captures the depth of the season while staying true to the restaurant’s ethos of refinement.
The journey begins with a pumpkin salad, where roasted pumpkin, carrots, courgettes, and portobellini mushrooms are folded into quinoa and elevated with pumpkin seeds, cashews, raisins, and a delicate peanut butter–paprika dressing. It is a composition that speaks to both vibrancy and warmth.
Burrata with roasted vegetables continues the dialogue with a more grounded sensibility. The creaminess of the burrata is offset by red horn peppers, fennel, and baby carrots, while basil leaves, balsamic vinegar, and olive oil introduce balance and clarity.
Spiced yogurt offers a more unexpected narrative. Infused with cinnamon, cardamom, and anise, it is served with a warm crumble of pears and apples glazed in buttery miso caramel, creating a dish that is at once delicate, layered, and indulgent.
At the heart of the menu stands the beef tartare — a bold yet precise expression of SAMO×’s culinary vision. Beef tenderloin is sharpened with pickled celery, jalapeños, radish, and Dijon mustard, before being finished with olive crumble, parsley oil, and egg yolk. The result is a dish that captures the balance between technique and emotion, indulgence and restraint.
